‍

About MATR Patty

‍

Gluten-free oats, split peas, lupin, beetroot and potatoes. That’s all there is in MATR. No additives or texturisers.

‍

MATR gets its flavour, texture and juicy bite from fermentation. In this recipe, we slice our Patty into thin strips and fry them, before rolling them into the flatbread.

‍

The rich, savoury flavour works beautifully with the creamy cheese, sweet peppers and sharp pickled onions.

‍

How to make pinwheels with MATR

‍

1

Prepare the MATR Patty:

‍

  1. Place the MATR Patties on a chopping board. Using a sharp knife, cut them diagonally into thin, wide strips. Cutting at an angle gives you longer pieces that are easier to arrange inside the flatbread.

‍

  1. Heat a little neutral oil in a frying pan over a medium heat.

‍

  1. Add the MATR strips and fry them until golden, turning them gently after a few minutes. Season with salt and freshly ground black pepper.

‍

  1. Remove the strips from the pan and set them aside to cool slightly while you prepare the remaining ingredients.

‍

1

Prepare the filling:

‍

  1. Drain the pickled red onions and roasted peppers to remove any excess liquid.

‍

  1. Slice the roasted peppers into strips if they're not already cut.

‍

  1. Rinse your salad leaves if needed and dry them thoroughly.

‍

  1. Take the cream cheese out of the fridge and give it a quick stir if it's too firm to spread easily.

‍

1

Assemble the pinwheels:

‍

  1. Lay a large sheet of lavash or another soft flatbread on a clean chopping board.

‍

  1. Spread a layer of cream cheese along one edge of the bread. Arrange the MATR strips, roasted peppers, pickled onions and salad leaves in rows across the flatbread.

‍

  1. Finish with another strip of cream cheese along the opposite edge. This will help seal the roll once you've wrapped everything up.

‍

  1. If you're using smaller flatbreads or want to add more filling, you can overlap two sheets slightly to create a larger surface.

‍

  1. Starting at one end, roll the flatbread up as tightly as you can without tearing it. Keep the filling tucked in as you go, then press the cream cheese-coated edge gently against the roll to seal it.

‍

1

Chill and slice:

‍

  1. Wrap the finished roll tightly in foil or cling film.

‍

  1. Place it in the fridge for at least 30 minutes. This helps the roll firm up and makes it easier to cut into neat pinwheels.

‍

  1. Remove the wrapping and place the roll on a chopping board.

‍

  1. Using a sharp knife, cut it into thick, even slices to reveal the colourful filling.

‍

  1. Arrange the pinwheels on a serving platter. If any pieces need a little extra help staying together, secure them with a cocktail stick.

‍

Serve them to your party guests, and watch the pinwheels disappear from the plate at record speed.

‍

Tips for making great pinwheels

‍

Choose a soft, flexible flatbread. Lavash works particularly well because it's thin and easy to roll. If your flatbread feels stiff, warm it very briefly to make it more flexible, then let it cool before adding the cream cheese and salad leaves.

‍

Think about the direction of your filling. Arrange the MATR strips and vegetables in rows across the flatbread so the filling is distributed along the length of the roll. This helps every pinwheel get a little of everything.

‍

Leave some space at the edges. It's tempting to pile on as much filling as possible, but an overfilled flatbread is harder to roll and more likely to split. Leave a little room around the edges to keep everything neatly tucked inside.

‍

Use a clean, sharp knife. Wipe the blade between cuts if cream cheese starts to build up. You'll get cleaner spirals without dragging the filling out of the roll.

‍

‍

Why make vegetarian pinwheels with MATR?

‍

Pinwheels are all about getting plenty of flavour into one little bite.

‍

Cream cheese gives you a soft, creamy base. Pickled onions bring a little sharpness, while roasted red peppers add sweetness to the small bites.

‍

And then there’s of course MATR.

‍

Fermentation develops our patty's deep umami flavour and juicy texture. Once sliced and fried, it adds a savoury element that works beautifully with the fresh vegetables and creamy filling.

‍

Adding MATR to your pinwheels is simply a great way of ensuring you get plenty of flavour in every bite.

Frequently asked questions

‍

What are pinwheels?

‍

Pinwheels are small, spiral-shaped snacks made by spreading a filling over flatbread or another suitable base, rolling it up and slicing it into rounds.

‍

Our vegetarian pinwheels use lavash bread filled with MATR Patty, cream cheese, roasted peppers, pickled red onions and mixed greens.

‍

How do you make pinwheels?

‍

Start by preparing your filling. In this recipe, we slice and fry MATR Patty before arranging it on a large flatbread with cream cheese and vegetables.

‍

Roll the bread tightly, wrap it and refrigerate for at least 30 minutes. Once chilled, cut the roll into thick slices to create the pinwheels.

‍

Can you make vegetarian pinwheels?

‍

Yes. This recipe uses MATR Patty instead of meat, together with cream cheese, pickled onions, roasted peppers and salad leaves.

‍

Choose vegetarian-friendly cream cheese and flatbread if you want to make sure every ingredient meets your dietary requirements.

‍

What kind of bread is best for pinwheels?

‍

Lavash is a good choice because it's thin, soft and flexible enough to roll around the filling.

You can also use another large, soft flatbread. The important thing is that it doesn't crack when rolled and is big enough to hold the ingredients.

‍

How do you stop pinwheels from falling apart?

‍

Spread cream cheese along both ends of the flatbread to help seal the roll. Avoid overfilling it, and roll everything together as tightly as possible without tearing the bread.

‍

Wrap the finished roll and refrigerate it for at least 30 minutes before slicing. If needed, secure individual pinwheels with cocktail sticks.
