Our MATR Block is firm, juicy and full of flavour. You can chop the block into the exact shape and size that fits your recipe. Large rustic chunks with plenty of bite. Smaller cubes that soak up the sauces and distribute flavour evenly in the simmering pot. Thick slices that can be used as filling in a sandwich.

Just five ingredients. That is all it takes to create MATR. Thanks to our natural fermentation process there is simply no need to add anything else.
As our MATR vegetables go through fermentation they naturally develop their rich flavour and firm texture. Qualities that many other products can only achieve with additives and long ingredient lists.
Ingredients in MATR Block:
Legumes 38% consisting of peas* and lupins*. Root vegetables 38% consisting of potatoes* and beetroot*. Gluten free oats* 19%.
Water, concentrated beetroot juice*, salt, thyme*, garlic powder* and fungal culture.
We believe quality ingredients are the foundation of a great product. That is why we use organic vegetables in MATR. Every ingredient marked with a * is organically grown.

Imagine slicing a fresh beetroot in half. It has colour, texture and a mild earthy flavour. After fermentation, it has become something entirely different.
It has developed a new, more complex flavour, greater depth and a texture you could never achieve just through cooking. The result you will end up with is pickled beetroot.
The very same transformation takes place in our Block. The fungal mycelium grows through the oats, split peas, lupins, beetroot and potatoes, sending thousands of tiny threads throughout the ingredients. These threads break down natural sugars and plant structures from within, releasing flavourful amino acids along the way. This process naturally binds everything together into a firm and juicy MATR block.
It is the same biological process that transforms cabbage into kimchi, milk into cheese and grain into sourdough. A natural process that has existed for thousands of years. And it remains one of the most effective ways to develop deep flavour without adding any artificial ingredients.

What makes MATR products special is the network of fungal mycelium that holds the ingredients together under heat. The pieces therefore keep their shape whether you pan fry them until crisp, let them simmer in a sauce or heat them in the oven.

In the pan
Add a little oil to a frying pan over medium heat. Place the MATR pieces in the pan and turn them regularly until they are golden and crisp on all sides. This usually takes around 4 to 6 minutes depending on size.
Once the pieces have developed some colour, you can serve them straight away or let them simmer further in your sauce.
In the oven
Preheat your oven to 165°C and heat for 15 minutes. Turn the pieces of MATR Block halfway through.
If you are hosting a group, it is often a good idea to use the oven to warm the MATR Blocks. It simply makes serving a bigger gathering a little easier.
It is a Tuesday evening and you have not planned anything special for dinner. You find a tin of coconut milk, a few red vegetables and a pack of MATR Block in the fridge. Twenty minutes later you have a delicious red curry on the table, where the chunky pieces of MATR have absorbed the sauce and developed a deep umami flavour.
MATR Block is designed to work perfectly in any dish that needs a firm, texture or a rich deep flavour.
If you want to try MATR products at home, you can find us in selected COOP stores in Denmark.
If you prefer to taste it before adding it to your shopping basket, you can visit our partners such as mother, Rørt and Gasoline Grill. They all serve MATR in Copenhagen.
Through our close collaborations we always ensure that preparation meets our quality standards. Heat, time and technique are essential in delivering the best MATR product and experience to customers, and our partners master all three.
The ingredients and fermentation process are exactly the same. The only difference is the shape. MATR Patty is already shaped as a patty, while MATR Block is a solid slab that you cut yourself. This gives you the freedom to adapt the size and presentation to the dish you are making.
MATR Block works best in dishes with sauce and heat, where the pieces can absorb flavour as they cook. Use it in curries, stir fries and stews, slice it for sandwiches and focaccia, or tear it into pieces for bowls and omelettes.
