Green stir-fry with MATR bites and sticky sauce

Lots of healthy, green vegetables, flash-fried with juicy bits of MATR, and wrapped in a delicious sticky sauce with a kick from chilli and ginger. Delicious dinner in no time.
Ingredients
- Ingredients: 1 x 300g pack of MATR block, broken into smaller pieces
- 5-600 grams of green vegetables depending on taste and season, for example asparagus, spring onions, leeks, green asparagus, romesco cabbage, spinach and/or broccoli.
- 1 dl of your favorite shoyu
- ½ dl cane sugar, brown sugar or syrup
- A little toasted sesame oil
- 1 finely chopped spicy green chili – or to taste
- 1 cube ginger, finely grated
- 1 clove of garlic, crushed
- 1 handful of cashews
- A tablespoons of black and/or white sesame seeds
- 1 bunch coriander
- Boiled jasmine rice
Method
- Rinse the vegetables and cut them into bite-sized pieces.
- Stir your sticky sauce together from soy, sugar and spices.
- Put a little oil on a large pan or in a wok and roast your MATR block until the pieces have a light crust. Remove them from the pan and keep them warm.
- Add a little more oil to the pan and add the vegetables.
- Fry them at a good heat until they are crispy.
- Return the MATR to the pan and pour the sticky sauce over it.
- Fry on a good heat until the sauce has boiled down and starts to caramelise.
- Top the dish with cashews and coriander and eat immediately, for example with cooked jasmine rice or quinoa.
