Tacos with Salsa Verde

We never need an excuse to eat tacos. If you need one, according to the calendar it’s Taco Tuesday. Our tacos are made of only veggies and legumes which will give you a nice boost of energy. They take very little time to throw together and will satisfy your taco cravings. The key to a great taco and most things in life is simplicity.
Ingredients
Salsa Verde
- 1 Lime
- 8 tomatillos, canned or fresh if possible
- 1 bunch coriander
- 2 small onions, peeled and cut in half
- 1 jalapeño, cut and deseeded (keep seeds if you want some heat)
- Neutral cooking oil
- Salt
Tacos
- Corn tortillas
- 1 small white onion, diced small
- Coriander, cleaned and finely chopped
- 1 Tbsp Ground coriander seed
- 1 Tbsp Ground cumin
- 1 Tsp Ground chili flakes, more if prefer spicier
- 1 x 300g of MATR block, cut into 5 mm thick strips
- Any neutral cooking oil
- Salt
Method
Salsa Verde
- Preheat oven to 230C
- Toss tomatillos, jalapeño, and onions with some oil and salt
- Place on a roasting tray and cook in the oven until well charred, around 15 minutes
- Blend with 1 bunch of cleaned coriander Season with salt and lime juice to taste
- Cool until used. Can be kept refrigerated for up to 5 days
Tacos
- Toast tortillas in a pan on medium-high heat
- Combine MATR strips, ground coriander seed, ground cumin, ground chili flakes, salt, and some neutral-flavored cooking oil in a bowl
- Cook strips in a pan on medium heat, flipping regularly to prevent burning
- Assemble tacos and enjoy!
