Homemade breakfast muffin with egg, cheese and MATR

A warm, toasted breakfast muffin. A fried egg. Melted cheese. And a juicy MATR Patty. We've made our own version of the English breakfast muffin. First, we fry our MATR patty until golden, then let the cheese melt over it before combining everything in a toasted English muffin with a little chilli ketchup.

About MATR Patty

‍

Our MATR Patty is made from five organic ingredients, naturally brought together through fermentation. Along the way, they develop the deep umami flavour and juicy texture that make MATR what it is.

‍

For our homemade breakfast muffin, we fry the patty until golden and let a slice of cheese melt on top. Add a fried egg and a warm muffin, and you've got a delicious breakfast packed with flavour.

How to make a homemade breakfast sandwich with MATR

1

Start with the muffins and chilli ketchup:

‍

  1. Slice the English muffins in half and heat a frying pan over medium heat.

‍

  1. Add a little butter to the pan and toast the muffin halves, cut-side down, until golden and lightly crisp. Set aside.

‍

  1. Mix the ketchup with a little hot sauce in a small bowl. Taste and adjust the heat depending on how much chilli you fancy first thing in the morning.

‍

Fry the MATR Patty with cheese:

‍

  1. Add a little neutral oil to the pan and heat over a medium-low heat.

‍

  1. Place the MATR Patties in the pan and season lightly with salt and freshly ground black pepper.

‍

  1. Fry for approximately 3–5 minutes on each side, until golden.

‍

  1. Once you've flipped the Patties, place a slice of cheese on each one. Let the cheese melt while the Patties finish cooking.

‍

  1. Remove the Patties from the pan and keep them warm while you prepare the eggs.

‍

1

Fry the eggs:

‍

  1. Increase the heat to medium-high and add a little butter or oil to the pan.

‍

  1. Crack the eggs into the pan and season with salt and freshly ground black pepper.

‍

  1. Cook them just the way you like them. A runny yolk makes for an extra indulgent sandwich, while a fully set egg makes it easier to eat on the go.

‍

1

Assemble your breakfast muffin:

‍

  1. Spread chilli ketchup on both halves of the toasted muffins.

‍

  1. Place a warm MATR Patty with melted cheese on each bottom half.

‍

  1. Top with a fried egg and finish with the top half of the muffin.

‍

Gently press the sandwich together and serve straight away while the cheese is still melted and the bread is warm. And don't forget the napkins. You'll probably need them.

Tips for an even better breakfast sandwich

‍

Make the egg fit the muffin. Use a greased egg ring in the pan to give your fried egg the same round shape as your muffin. It makes the sandwich easier to assemble and ensures you get a little bit of egg in every bite.

‍

Melt the cheese under a lid. Place the cheese on the MATR Patty and cover the pan with a lid for the few final minutes of cooking. The trapped heat helps the cheese melt without having to cook the Patty any longer than necessary.

‍

Add a little acidity. A few thin slices of pickled cucumber or some pickled red onion provide a fresh contrast to the melted cheese and egg.

‍

Let the Patty develop a golden crust. Resist the temptation to move the MATR Patty around too much. Leave it undisturbed in the pan until it develops a golden crust, then flip it.

‍

What to serve with a breakfast muffin

‍

Your breakfast muffin doesn't necessarily need anything on the side. But if you're serving brunch or just feeling extra hungry, there's always room for a little more on your plate.

‍

Classic sides:

  • Crispy hash browns
  • Oven-roasted potatoes
  • A small green salad
  • Extra chilli ketchup

‍

Modern sides:

  • Avocado with lemon and chilli flakes
  • Oven-roasted cherry tomatoes
  • Cucumber salad with a fresh vinaigrette
  • Fresh spinach with lemon and olive oil

Why try a breakfast muffin with MATR?

‍

The classic English breakfast muffin with egg, cheese and bacon has been a favourite for years. But why not give it a little veggie twist?

‍

Our version is a vegetarian breakfast muffin. This means we use our fermented greens instead of bacon in the breakfast muffin.

‍

Because of the fermentation process behind MATR, your muffin will get a deep umami flavour, a juicy texture and a satisfying bite.

Frequently asked questions

‍

What is a breakfast muffin?

‍

A breakfast muffin is a sandwich made with an English muffin, sliced in half, toasted and filled with egg and cheese. In our recipe, we add MATR Patty and chilli ketchup for extra flavour.

‍

How do you make a breakfast muffin at home?

‍

Toast an English muffin in a frying pan and fry the MATR Patty until golden. Place a slice of cheese on the Patty and let it melt. Then fry an egg and add a little chilli ketchup to your muffin before assembling the sandwich.

‍

Can you make a breakfast sandwich without bacon?

‍

Yes. In this recipe, we use our MATR Patty instead of bacon. It gives the sandwich deep umami flavour and a juicy bite that pairs beautifully with egg and melted cheese.

‍

What kind of bread do you use for a breakfast muffin?

‍

An English muffin is the classic choice. It's soft on the inside and develops a lightly crisp surface when toasted. You can also use a small brioche bun if you prefer something softer and slightly sweeter.

‍

Can you make a breakfast muffin in advance?

‍

You can prepare the chilli ketchup and slice the muffins ahead of time. It's best to wait until just before serving to fry the MATR Patty and eggs, so you can enjoy a warm sandwich with freshly melted cheese.
