About MATR products
MATR Mince and MATR Block are made from five organic ingredients: oats, split peas, lupins, beetroot and potatoes. These ingredients are combined through mushroom fermentation, which creates the delicious umami flavour and characteristic texture that make MATR unique.
And these qualities make MATR an ideal ingredient for the recipe, Danish meatballs in curry sauce.
Our Danish plant-based meatballs in curry sauce recipe is inspired by Claus Meyer’s approach to everyday cooking. This means the recipe focuses on simple cooking methods, delicious flavour and carefully selected, high-quality ingredients.
How to make Danish meatballs in curry sauce with MATR
The Danish meatballs:
- Mix MATR Hakket with salt and wheat flour in a bowl.
- Add the eggs and stir the mixture thoroughly until it becomes smooth and evenly combined.
- Peel and finely chop the onion, then mix it into the mixture. Gradually add the milk while stirring, allowing the mixture to absorb the liquid.
- Season with freshly ground black pepper.
- Let the mixture rest in the refrigerator for 30 minutes. This resting time allows the mixture to set and helps develop the flavour.
- Shape the mixture into small meatballs using a spoon or your hands.
- Gently cook the meatballs in lightly salted water or vegetable stock for approximately 5 minutes until firm and heated through. Remove them from the pot and save some of the cooking liquid for the sauce if desired.
Curry sauce:
- Peel and finely chop the onion.
- Melt the butter in a saucepan over medium heat. Add the curry powder and let it toast for 1–2 minutes while stirring, allowing the spices to release their aroma.
- Add the chopped onion and cook until soft and translucent.
- Sprinkle in the wheat flour and stir well. Gradually add the vegetable stock while continuously stirring to create a smooth sauce without lumps.
- Add the cooking cream and let the sauce simmer gently for 8–10 minutes.
- Season with salt, pepper and a little lemon juice, if you prefer the sauce more acidic.
- Add the cooked Danish meatballs to the curry sauce and let them simmer for 3–5 minutes so they become heated through and absorb the flavours of the sauce.

Tips for the best Danish meatballs in curry sauce
The water in your pot should gently simmer, not boil vigorously. Too much heat can cause the meatballs to fall apart, so we suggest you handle them with care.
If you prefer golden meatballs in your curry sauce, you can fry them in a pan instead. This creates a slightly crispy texture rather than soft.
Grate an apple into your curry sauce. It adds a mild sweetness and a touch of acidity that pairs well with the spices in the sauce.
Instead of milk or cream, you can use coconut milk. This gives the curry sauce a milder flavour profile and balances the intense curry notes.
Is your curry sauce too thick or too spicy? Adjust it with a little extra milk or vegetable stock. You can also sprinkle sugar or coconut flakes over the finished dish.
