Moussaka with Aubergine, Potato and MATR

Moussaka is a flavorful and hearty Mediterranean dish, a true testament to the rich and diverse culinary traditions of the Mediterranean region.
Moussaka is layered in a casserole and features three main components: a base of spiced minced MATR, layers of thinly sliced vegetables, and a creamy béchamel sauce. The dish is baked to perfection, resulting in a harmonious union of flavors and textures.

 

The star of the show is the MATR mince which is replacing the meat. This savory umami layer forms the foundation of the moussaka and offers a satisfying depth of flavor.

 

 

Ingredients

Moussaka Filling:

  • 2 small Onions
  • 2 cloves Garlic
  • 3 tsp Sun-dried tomatoes
  • 2 tsp Cumin
  • 2 tsp Paprika
  • 1 tsp Cinnamon
  • 2 tsp Thyme or basil
  • 2 cans Canned tomatoes
  • 2 tbsp Tomato puree
  • 1 dl Red wine
  • 300 g MATR mince

Mornay Sauce:

  • 100 g Butter
  • 4 tbsp Flour
  • 3,5 dl Milk
  • 1 tsp Salt
  • 1 tsp Nutmeg

Additionally:

  • 2 small Eggplants (Aubergines)
  • 200 g Potatoes
  • 1 tsp | Salt and pepper
  • Optional: Cheese for topping
Method

Moussaka Filling:
1. Pour some oil into a pot or a deep sauté pan.
2. Add onions and garlic and sauté until soft.
3. Slice your sun-dried tomatoes and add them to the pot with the spices. Let them briefly sauté.
4. Reduce the heat and add tomato puree, canned tomatoes, Matr minced meat, and red wine. Let the filling simmer while preparing the vegetables.
5. Preheat the oven to 180°C (convection).
6. Finely slice your aubergines and potatoes

 

Mornay Sauce:
1. Melt butter in a saucepan and whisk in flour to make a “dough ball”.
2. Gradually add milk while stirring. Finally, whisk in your nutmeg. Stir until the sauce is creamy and smooth.
3. Season with salt and pepper to taste.

 

Assembling:
1. Butter an ovenproof baking dish and place a layer of moussaka filling on the bottom.
2. Follow with a thin layer of eggplant and potato slices, then a layer of Mornay sauce.
3. Continue layering in this manner until you have a layer of moussaka filling on top,
4. Optionally, sprinkle cheese on top.
5. Bake the moussaka in the preheated oven for 40-45 minutes, or until the potatoes are tender.
