MATR Ragù Parpadelle

Ragù Pappardelle is a beloved Italian dish that embodies the essence of comfort food. This hearty, soul-warming meal consists of wide, ribbon-like pasta coated in a rich and flavorful MATR umami-based sauce known as ragù.
With its roots deeply embedded in the culinary traditions of Italy, Ragù Pappardelle has earned its place as a timeless favorite among pasta lovers worldwide.

Ingredients

Pasta:

  • 160 g Pappardelle pasta (dry)

Sauce:

  • 2 cloves Garlic
  • 2 medium Onions
  • 1 tbsp Olive oil
  • 2 leaves Bay leaves
  • 1 tbsp Soy sauce
  • 30 g Carrots
  • 2 pieces Sun-dried tomatoes
  • 1 dl Red wine
  • 100 g Cherry tomatoes
  • 0.6 liters Vegetable broth
  • 4 tbsp Tomato puree
  • 1 tsp Thyme
  • 200 g MATR Mince⁠
Method

1. Finely chop garlic, onions, and sun-dried tomatoes, then sauté them in oil over medium heat.
2. Chop your carrots in small pieces and set aside for later.
3. Add a pinch of salt and let it simmer until the onions are translucent and soft.
4. Stir in tomato puree, thyme, MATR mince, and soy sauce. Let it cook for 5 minutes.
5. Pour in red wine and add bay leaves. Simmer until it’s reduced by half.
6. Add vegetable broth, cherry tomatoes, and carrots, and let it simmer over low to medium heat for 5-10 minutes.
7. Cook your pasta for about 4 minutes and set it aside.
8. Garnish with fresh basil and optionally parmesan cheese.
