Our MATR Patty is a juicy, flavourful patty made from fermented vegetables, legumes and grains. It is created for those everyday meals where you want something simple without compromising on taste.

If you turn over the MATR packaging, you will find a refreshingly short ingredient list. This is simply because our MATR Patty only consists of five simple ingredients.
Ingredients in MATR Patty:
Legumes 38% (peas*, lupin*)
Root vegetables 38% (potatoes*, beetroot*)
Gluten-free oats 19%
Water, concentrated beetroot juice*, salt, thyme*, garlic powder* and mushroom culture.
At MATR, quality comes first. We respect our raw ingredients, and believe food starts with great produce. That is also one of the reasons we use organic ingredients. Organic elements are marked with * on our ingredient list above.

Fermentation is one of the oldest techniques in the world of food, and it is also used when processing vegetables. It is actually the process that transforms cabbage into kimchi and beetroot into tangy, flavourful specialities.
Many other vegetables can be fermented too, including cucumbers, radishes and onions. As they ferment, they develop new layers of flavour, creating a richer, deeper taste with a natural complexity.
But why does the flavour actually change?
During fermentation, microorganisms settle in the vegetables and begin breaking down their natural sugars and internal structures from within.
As they do this, new flavours and textures are created. The result is a more complex and deeper taste.
At MATR, we use fermented vegetables in our Patty, which is why it tastes so good. The fermentation process gives our product a fresh, rich and savoury umami flavour.
A unique MATR taste you can not find anywhere else.

The ingredients in MATR respond to heat by binding together. This means your MATR Patty keeps its shape and structure whether you pan fry it, grill it or heat it in the oven.
The reason is that the mushroom mycelium actively works inside our MATR Patty. It functions as a living network that grips each ingredient individually and holds them together. Even when put to the test by heat, which would otherwise typically cause traditional burger patties to fall apart.

Fry your MATR Patty
Add a little oil to the pan. Medium-low heat. Fry your MATR Patty for 3 to 5 minutes on each side.
Once your Patty has a nice golden colour and a crispy surface, you can take it off the pan.
Your Patty can also be grilled
Brush your patty with oil on both sides. Set the grill to medium heat. Turn the patty once.
MATR Patty is perfect for barbecue evenings, as it does not melt down through the grates. It keeps its firm outer shape and its juicy inside.
Warm your MATR Patty in the oven
Set your oven to 165 degrees for 15 minutes. Turn your MATR Patty halfway through the total time.
When you have a lot of people seated around the dinner table, the oven is often a practical way to prepare several MATR Patties at once.
MATR fits into many of the recipes you already make at home. The idea behind the product is precisely that it should work in simple, everyday Danish dishes during a busy week.
Good food is meant to be shared. And MATR gives you something worth gathering around.

Vegetarian meat is typically made from plant-based ingredients such as vegetables, mushrooms, grains and spices. The combination of ingredients is used to create a flavour and texture that resembles meat.
Vegetarian burgers are available in most supermarkets, health food shops and at grill and burger restaurants. Many restaurants also offer plant-based alternatives on the menu.
You can find our MATR products at selected COOP stores. If you would like to try them first, you can taste MATR at Mother, Rørt and Gasoline Grill in Copenhagen.
At MATR we recommend frying the patty in a hot pan with a little fat, so it develops a crispy surface and a juicy centre. Give it good heat and let it build a nice golden crust before you turn it. That is exactly what brings out the MATR flavour best.
A veggie burger is a burger where the patty is made from plant-based ingredients rather than meat. At MATR we work with mushrooms as a core ingredient, because they provide a natural umami and a firm texture.
Plant-based means that the food consists primarily of ingredients derived from plants. That can include vegetables, fruit, grains, pulses, nuts and mushrooms.
At MATR we prefer to describe our product as fermented vegetables. We do this because that is precisely what a MATR Patty is made from. Read more in our article on fermentation.
