Quiche
Cook time: 45 Serves: 2 Difficulty: Easy
Brunch, lunch, or dinner. Hot or cold. A savoury, fluffy and goodie-filled quiche is the perfect light meal, and is easy as pie.
Ingredients
- 1 pack of MATR Mince
- Homemade quiche pie crust or store bought
- 6 eggs
- 1 bag spinach
- 2 cloves garlic
- 1 ball mozzarella
- 1 bunch basil
- Parmesan
Method
- Make your favourite pie crust, or bake the store bought according the recipe provided. Once baked, set aside to cool.
- Now set oven to 160C.
- Mince your garlic.
- Crack your eggs into a large bowl and whisk using a fork until homogenous. Season with salt and pepper.
- Heat a large pan on medium heat, add some olive oil and cook the spinach quickly. Season with salt and pepper while cooking for no more than 45 seconds.
- In the same pan, sauté your MATR Mince in a little neutral oil for 3-5 minutes.
- Allow to cool and add spinach into your egg mixture.
- Sweat your garlic in the same pan as you cooked your spinach in with some olive oil until fragrant. Add to the egg mixture.
- Mix until ingredients are well incorporated and pour into pie crust.
- Rip up the mozzarella and place it randomly throughout the egg mixture. Place quiche in the oven and bake for 10 minutes, checking every minute after 7 minutes.
- It may take more than 10 minutes to cook depending on your oven. Check if the center of the quiche has just set and wiggles just a little when you shake it.
- Once done, remove from the oven and let rest. While it sets, grate some parmesan on top and enjoy once cooled.
