Pinwheels

Classic finger food with a new twist, highlighting the versatility of the MATR Patty in a new way. Serve at your next cocktail party.

Ingredients
  • 1 packet of MATR Patties
  • Lavash or other large flatbread bread
  • Pickled red onions
  • Mixed greens (or any greens you prefer)
  • Cream cheese  – any flavour works
  • Roasted red peppers (either from a jar or home made)
Method
  1. Place your MATR Patties on a cutting board, and with a sharp knife, begin slicing the patties on a wide angle, creating thin, wide strips of MATR.
  2. Heat a pan with a bit of neutral cooking oil over medium heat, and fry the slices. Gently turn them after a few minutes and season with salt and pepper.
  3. On a large cutting board, lay out your flatbread.
  4. Add your fillings in rows along the length of the board, starting and finishing with cream cheese to seal the roll. Alternatively, you can overlap two flatbreads, making room for more filling.
  5. Once all the fillings are laid out, start rolling up the pinwheel as tightly as you can without breaking the bread.
  6. Wrap in tin foil or plastic wrap, and let it chill in the fridge for at least 30 mins before slicing into thick rolls.
  7. Depending on the amount of filling, a cocktail stick can be used to secure the roll.
