Hawawshi

Cook time: 1 hour    Serves: 2    Difficulty: Easy

 

Inspired by Egyptian street food, this is a great addition to the lunchbox rotation or a quick dinner. Warm, spiced and savoury.

Ingredients
  • 1 packet of MATR Mince
  • 2 pita breads
  • 2 cans or half a tube of tomato puree
  • 1 Green pepper
  • 1 Onion
  • 2 Garlic cloves
  • 1 tsp coriander power
  • 1 tsp allspice
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp cardamom
  • A pinch of cinnamon
Method
  1. Preheat your oven to 180C.
  2. Dice the onion and green pepper, and mince the garlic.
  3. Heat some neutral oil in a pot over medium heat.
  4. Toss in the onions, green pepper and sauté for 5 minutes, until they begin to soften and the onion is translucent. Add the garlic and cook while stirring for 2 minutes.
  5. Now add in the MATR Mince, and cook for 4-5 minutes.
  6. Add the tomato puree and allow this to cook and gain a bit of colour, before adding a small glass of water, the spices and salt and pepper to taste. The goal is a sauce, which is quite dry and not watery.
  7. Allow to simmer, before letting it cool.
  8. Meanwhile, cut your pita either in half or open it as you normally would.
  9. Spoon in the sauce to fill the pita bread, then brush with melted butter and wrap them in tin foil.
  10. Pop into the oven for about 15 minutes, then remove and unwrap. The bread should be crisp, but also slightly soggy.
  11. Serve with a salad and a good yoghurt dip.
