Hawawshi

Inspired by Egyptian street food, this is a great addition to the lunchbox rotation or a quick dinner. Warm, spiced and savoury.
Ingredients
- 1 packet of MATR Mince
- 2 pita breads
- 2 cans or half a tube of tomato puree
- 1 Green pepper
- 1 Onion
- 2 Garlic cloves
- 1 tsp coriander power
- 1 tsp allspice
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp cardamom
- A pinch of cinnamon
Method
- Preheat your oven to 180C.
- Dice the onion and green pepper, and mince the garlic.
- Heat some neutral oil in a pot over medium heat.
- Toss in the onions, green pepper and sauté for 5 minutes, until they begin to soften and the onion is translucent. Add the garlic and cook while stirring for 2 minutes.
- Now add in the MATR Mince, and cook for 4-5 minutes.
- Add the tomato puree and allow this to cook and gain a bit of colour, before adding a small glass of water, the spices and salt and pepper to taste. The goal is a sauce, which is quite dry and not watery.
- Allow to simmer, before letting it cool.
- Meanwhile, cut your pita either in half or open it as you normally would.
- Spoon in the sauce to fill the pita bread, then brush with melted butter and wrap them in tin foil.
- Pop into the oven for about 15 minutes, then remove and unwrap. The bread should be crisp, but also slightly soggy.
- Serve with a salad and a good yoghurt dip.
